Comment by Michele Chisholm on May 1, 2012 at 6:38am I make a healthy, delicious ginger tea (ginger ale) instead of buying canned ginger ale.
Peel and chop about 1 1/2 lbs. of fresh ginger root. Fill a 3 qt. saucepan with water and add the ginger root. Low boil it for about 1 1/2 hours. When it has cooled down to warm add the juice of one freshly squeezed lemon. Add your favorite honey to taste. Keep it in a pitcher in the fridge. I dilute it with 1/2 seltzer water and 1/2 ginger tea mixture. Makes a great home-made ginger ale!
